National Cookie Day!
I have the biggest sweet tooth ever. I can’t deny it. Everyone that knows me, knows this about me. I can be disciplined with what I eat. I actually like brown rice and veggies. But, cakes, pies and cookies are my achilles' heel. I love them. Today is no exception! Today we will celebrate and indulge because it is National Cookie Day! Good for us!
I have been known to buy off the shelves and this takes a toll of your calorie intake and more importantly, your health in general. Store bought cookies are much higher in fat, sugar and added preservatives and chemicals. Avoid whenever possible. Pinterest had countless homemade cookie recipes and I love browsing and trying new ones.
Here is a recipe I’ve tried that is not only delicious and nutritious but it is so easy to make and even great to get your kids involved with the process.
All Natural No Bake Cookies
1 cup honey
1/2 cup coconut oil
1/2 cup cocoa powder
2 cups rolled oats
1 cup natural peanut butter
1 cup unsweetened flaked coconut
1 teaspoon vanilla extract
Directions
1. Combine honey, coconut oil, and cocoa powder in a small pot and bring to a boil; cook at a boil for 2 minutes and remove from heat. Stir oats, peanut butter, coconut, and vanilla extract into the hot honey mixture until the peanut butter melts and the mixture is smooth.
2. Drop mixture by spoonful onto waxed paper. Set aside to cool until firm, about 20 minutes.
