Summer is near! Time for family fun in the sun, blockbuster movies & the quickest ‘Dash’ dishes to feed your hungry brood! Not to worry I have you covered with 2 of my go-to recipes for my littles!
Stove Top Tortilla Pizza
This is something I make a lot in my house! The kids are pleased every time. It’s even simple enough for my 6 year old to throw together himself with some supervision. The best!
I personally use 3 ingredients. Trader Joe’s pizza sauce, Trader Joe’s whole wheat wraps and shredded mozzarella or Monterrey jack! You can add whatever toppings you like. *Spinach tortilla wraps also work well!
Heat your skillet or pan. Prepare your tortilla by poking it a couple of times with a fork. Warm the tortilla on both sides.
Add your sauce! I use 1-2 tablespoons of pizza sauce but you can add to your liking. Less would be fine if you don’t like it too saucy!
Add the good stuff. We are cheese people, so we use a good amount. Feel free to add to your liking. This is the time to add other ingredients such as veggies and a light layer of meats! After you’ve added your toppings, cover the pizza and this will allow the cheese to melt and will evenly cook the top of your tortilla pizza.
I remove it from heat when the cheese is nice and gooey. Then transfer it to a cutting board to cut and serve!
Berry Watermelon “Cake”
It’s hot in the valley, and we go through tons of juicy fruit! Watermelon is a staple in our home, and I like to shake things up every so often and make a delicious watermelon “cake”!
Here’s a sweet treat you won’t mind feeding your kids! What I like most about this cake, is there’s no wrong way to make it! Get the kids involved!
You’ll need
- 1 whole seedless watermelon
- 1 tub of Cool whip or aerosol whipped cream. DIY Coconut whip is also an option!
- Strawberries (I used 5)
- Blueberries
These are just the things I used. You can make it your own. Add kiwis, almonds, the works! Go Nuts!
Cut the ends, and cut off the rind in the desired shape of your choosing. After you have your “naked” watermelon, put your blank canvas on a platter and use paper towels to pat down and absorb the some of the extra moisture. Decorate with your whipped topping and fruit/nuts of your choice!
Voilá!
